A port city on the Sea of Japan and the terminus of the Joetsu Shinkansen. It sits where the Shinano and Agano rivers, two of Japan's great rivers, flow into the sea, so it is called the "City of Water", and in the Edo period it prospered as a major port of call for the Kitamaebune trading ships. Highlights include the stone-arched Bandai Bridge (1929), Sea of Japan seafood, Koshihikari rice and sake, and ferries from Niigata Port to Sado Island.

A thick stew of taro, carrot, mushrooms and other vegetables simmered in dried-scallop stock — a must at New Year and other celebrations.
